Apple Turnovers

Prep Time: 10 minutes  Total Time: 1 hour   Serves: 8

2 Granny Smith apples, peeled, cored, and chopped coarse
3/4 cup sugar
1 tablespoon fresh lemon juice
1/8 teaspoon salt
2 sheets of frozen puff pastry, thawed
1/2 cup applesauce
1 teaspoon cinnamon
plus...flour for the counter

1. Heat oven to 400 degrees. Lay out all ingredients. 


2. Pulse apples, 1/2 cup sugar, lemon juice, and salt in food processor until apples are coarsely ground. 

     3. Let apple mixture sit for 5 minutes, then drain through a strainer, reserving any accumulated juice.

 4. Unfold one sheet of puff pastry on a lightly floured cutting board. Cut the pastry into four 5-inch squares.

 5. Mound 1 tablespoon applesauce and 1 tablespoon of the apple mixture in the center of each square. 

6. Brush the edges of each square with the strained apple juice and fold into triangles. Crimp the edges together with a fork to seal.


 7. Lay turnovers on a wire rack and freeze for 15 minutes (or refrigerate for 30 minutes). Repeat with the remaining sheet of pastry, applesauce, and apple filling.

8. Toss the remaining 1/4 cup of sugar with the cinnamon.

9. Remove the pastries from the freezer, brush turnovers with the reserved apple juice, then sprinkle with cinnamon sugar.

10. Lay the turnovers on two parchment-lined baking sheets and bake until well browned, about 20 minutes, rotating and switching the baking sheets halfway through baking.

11. Cool for 15 minutes before removing from parchment paper (or else it will stick to the bottom of turnovers!).

12. Sprinkle with more cinnamon sugar to taste---enjoy!!
